I thought I would share a photo of my typical lunch. This only takes a few minutes to prepare and it’s mighty satisfying! I simply opened up two cans of black beans, and heated them up on the stove until they were boiling. I let them boil for a couple of minutes to let them get nice and hot. Then I drained them. I added them back to the pot, and added 1 can of Rotel tomatoes. I heated this up again and it was ready. I add a little pepper, and sometimes avocado. It’s delicious. Also, I had my LOVELY Rainier cherries yesterday. Those lovelies just melt in my mouth. Finally, I ate a head (well, I tried to finish it, but didn’t quite make it) of Romaine lettuce.
