Vegan Posole Soup

I have been trying to find ways to incorporate kale into my diet. I stumbled across a website called The World’s Healthiest Foods. Every single recipe I have tried from there, has been absolutely delicious. This is one of our favorites. This is how you make it:
1 medium onion chopped
6 cloves garlic, minced
4 cups (+) vegetable broth
2 Tablespoons fresh lime juice
2 cups canned hominy (drained)
3 cups kale, chopped fine
1 15 oz. can diced tomatoes
1 4 oz can diced green chili
3 Tablespoons chopped fresh cilantro
salt and pepper to taste

First, chop the onions and mince the garlic being sure to keep them separate. Begin by “healthy” sauteing the onions in vegetable broth. I do this on very high heat. I add more and more veg broth for the duration. Be sure to stir the onions and get them so they are soft and translucent. Then add the garlic and cook for one more minute. Be sure to add more vegetable broth as needed. Add the remaining ingredients (except kale and cilantro). Bring to boil on high heat. Once it comes to a boil, reduce heat to medium low and simmer for 10 minutes, uncovered. Add kale and cook for five more minutes. Add cilantro and salt and pepper. Enjoy!

We are trying to keep our babies healthy for as long as we have control, so we incorporate kale several times a week into our breakfast by chopping it and then sautéing in olive or grape seed oil with onions and colored peppers. Then adding that mixture to eggs for a healthy egg scramble breakfast. If kale isn’t available, then we use collards. 🙂

    • I love it Holly 🙂 I wish I would have pushed kale for mine when they were younger. They don’t seem to mind eating it now though.
