One of my all time favorite snacks is hummus. I could eat it all day long, every day! It’s super simple to make. Here’s how you do it:
1 cup garbanzo beans, drained
1/3 cup bean juice
2 cloves roasted garlic (I just wrap up the cloves in aluminum foil and bake at 350 for about 15 minutes to soften them)
1 Tablespoon tahini
2 Tablespoons lemon juice
Half-sharp Hungarian Paprika (sprinkled as needed)
Place all ingredients in a blender (we use Blendtec) and blend until smooth. Serve this with a variety of vegetables.
*** Tip *** This works better if you triple this recipe. 2 cans of garbanzo beans (15 oz) makes exactly three cups. PLUS just a single recipe did not do so well in our blender. It needed more volume. Count on the fact that you will WANT to make more than one batch because it gets gobbled up incredibly fast!
